Serves 10 people

Ingredients for the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

To make the Premix (produces 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Method

Making the Citrus Syrup: Combine all the items inside a pot, bring to a light boil, stirring to dissolve. After that, remove from the burner and leave to cool entirely. Transfer into an sealable bottle, close it keeping it in the refrigerator, where it will keep for up to four weeks.

Preparing the Premix: Mix every spirits and syrup into one sizeable container, allow it to infuse for one hour, then pass it through preferably using cheesecloth, to ensure it's perfectly clear.

For serving: Measure 85ml from the cocktail base to a mixing glass packed with ice, and stir carefully for about 60 seconds to chill. Filter into a frosted cocktail glass or equivalent, decorate with the cranberries and finish with a brief mist of the essential oil over the top.
